It's so decadent and it's healthy! I learned this recipe from April Ree during a weekend stay at Deer Lake Lodge.
Did you know chocolate is a fermented food??? I didn't. It's another reason dark chocolate and especially cacao are good for you.
Cacao Pudding
4 avocados (can use less)
1/4 cup organic coconut sugar
2 Tbsp maple syrup
1 tsp vanilla
1 cup cacao powder
tsp-Tbsp coconut oil
Pinch of salt
You can add a little more vanilla or coconut milk for a more liquid consistency. You can also soak 4-6 dates instead of coconut sugar and maple syrup.
Blend all ingredients. Chill in refrigerator. Top with cacao nibs when serving.
