It’s National Taco Day so of course I have to share some great ones I had in Breckenridge, Colorado, last Saturday.Instead of the Breakfast Burrito, I ordered corn tortillas and voila!  I had breakfast tacos. It was a delightful morning in Breck so my friend Melissa and I had brunch outside at Park and Main after our hike.  I got my tacos with eggs, potatoes, cheese, bacon and a side of salsa. They were delicious! Only thing that could have made them better would have been avocado.Park and Main is known for their pancakes so Melissa and I got a blueberry one as an appetizer. It was worth the splurge! Even the locals debate what’s the secret to their ultra fluffy pancakes.It wouldn’t be a perfect brunch without mimosas. Their blood orange mimosa was a nice twist on the classic.This was a brunch that was doggone good!
