If you’re visiting Beaver Creek or Avon and wanting avocado toast, head to Maya in the Westin Riverfront. While staying in the hotel for a work and leisure trip, I ate every meal at Maya. That’s typically something I don’t do traveling, but it was convenient and everything I tried was delicious. Maya is one of Chef Richard Sandoval’s restaurants and features a vibrant take on traditional Mexican dishes.
Let’s start with breakfast, which in my case was brunch. I love avocado toast. But, it has to be made with fresh avocado. I also really love sourdough bread so when I saw avocado toast on the menu, I went for it. The rustic sourdough bread was topped with avocado, cotija cheese, radishes, cherry tomatoes, and “everything bagel” seasoning. It’s garnished with cilantro and I added a poached egg. It was delicious and super easy to replicate at home. It’s healthy and filling.
It’s no secret I’m a fish taco fan. I love them, almost as much as I love shrimp and grits. Getting table side guacamole is a given if I see it on the menu. So is a really good margarita. Maya checked both of those boxes for dinner. Maya has a variety of tacos on the menu, but I went for the mahi mahi tacos. The fish is topped with chipotle slaw, avocado and cilantro. I got the sauce on the side since I’m not a saucy person. It was wonderful for dipping though. The tacos didn’t last long – I devoured all three! The pineapple lemongrass margarita paired beautiful with the tacos. I wasn’t sure if I would like lemongrass in a cocktail but this was light, refreshing and a delightfully different twist on a margarita.
