Sundance’s Pink Grapefruit Margarita

If you love grapefruit and margaritas then this is a match made in heaven for you!  While lunching in the Foundry Grill at Sundance Mountain Resort, I had one of the best margaritas I’ve ever had.  It was so good I did an InstaStory after my first sip!

 

First, it just looked gorgeous with the pink color and black salt lining the rim of the glass.  Second, it’s refreshing and wets your whistle like a great ‘rita should.  It’s so good that I had it both times I dined for lunch at Sundance during my recent stay with friends in Heber City, Utah.

Sundance’s Pink Grapefruit Margarita

1.5 oz. Cameron Silver Tequila

1 oz. Dry Curacao

Splash of fresh Grapefruit Juice

Splash of Fresh Lime Juice

Drizzle of Agave

Line rim of glass with black salt and garnish with a lime wedge.

If you visit Sundance Mountain Resort and dine in the Foundry Grill, you have to start off with Tempura Fried Artichoke Hearts with Roasted Garlic Aioli.  That appetizer is sinfully delicious!

If you’re like me and don’t eat meat (I went pescatarian last summer), they have some fabulous options.  If you’ve been out adventuring and worked up an appetite, try the Black Bean and Corn Burger with sweet potato fries.  That’s what I ordered after cross country skiing at Sundance and was full halfway through it!  The other option I loved was their Fish Tacos, which I quickly devoured during my second lunch visit.

If you don’t know, Robert Redford started Sundance Mountain Resort.  Yes, it’s where the film festival started.  Be sure to check out the walls of old photographs near the bathrooms and look for this wonderful quote by Redford.  Of course I was on the lookout for the movie legend, but didn’t see him.

After your lunch, work off what you ate while exploring the natural beauty of Sundance Mountain Resort.
