My favorite lunch spot in Beaver Creek, Colorado is an unassuming place you may pass right by when strolling through the village. It’s a relaxed fine dining mountain bistro focusing on locally sourced organic produce in their contemporary cuisine. Golden Eagle Inn has a delightful patio and is a favorite of locals since 1987 and visitors, once you find it. Golden Eagle Inn is close to the ink rink in the center of Beaver Creek Village.
During my last stay in Beaver Creek, my friend Christy and I were ready for a light lunch after a morning hike and before our appointments at Allegria Spa. It was a gorgeous day so we absolutely had to dine out on a patio and headed over the Golden Eagle Inn.
Wanting to eat light we decided to split the Eagle Salad. Honestly, it’s one of favorite salads anywhere! It’s baby greens, grape tomatoes, cranberries, pumpkin seeds, manchego cheese, and radishes topped with a passion fruit and ginger vinaigrette. It’s a delightful combination of sweet, earthy, and crunchy.
Our server heard us say how much we love manchego cheese so he brought us a little extra to add to our salad. If you go ask to sit in David’s section.
