Hands down best breakfast in Carbondale, Colorado, is Village Smithy Restaurant. It’s been a Roaring Fork Valley institution since 1975. If you want to go where the locals go, this is the place.I was tempted by the special Omelette with ham, asparagus and Brie cheese, but decided to go traditional Mexican with a breakfast fav of huevos rancheros.  I love extra crispy hashbrowns and theirs are right on point.Nothing fancy but oh so good and it’s great hiking fuel!
