Phat Thai

The Carbondale, Colorado, food scene is surprising. The small town between Glenwood Springs and Aspen is bursting with unique flavors, tons of outdoor seating in the summer, and a culinary scene that is on fire.

Phat Thai isn’t traditional Thai food. The cuisine is inspired by the southeastern Asia food but in Carbondale its done with the small town’s funky flair.

Immediately when you walk in, the red and zebra print Italian stiletto chair catches your eye.Phat Thai is known for their crafty cocktails so I decided on the Eager Bever. The vodka cocktail is done with muddled cucumber and pairs great with Thai food.It was late so we decided to split a couple appetizers to fuel up for a hike the next day.

Tom Kha Kai soup  is a great blend of sweet and savory.  The chicken coconut soup is done with galangal, mushrooms and chili jam.The Chicken Sate is a simple dish but a fast way to get some yummy protein. The skewered chicken is served with a peanut sauce and a refreshing carrot and cucumber relish.We indulged a little with the Sweet Corn and Crab Fritters. Being a southern girl, I’m always down to try fritters! These are served with a chili dipping sauce and herbed carrot salad.To top of the meal we decided to split the sweet rice dessert with mango ice cream. It’s a more traditional Thai dessert and perfect end to a great dinner!
